Daging Hitam Manis Berkerisik
 
First we started off with his lovely creation, the Daging Hitam Manis Berkerisik (Blacken Sweet Beef with Grated and Toasted Coconut) a simple and easy to cook dish. In this dish chef himself preferred to use tender texture sirloin steak as cooking time is much shorter compared to the local beef. Blended ingredients such as chilli, shallot, garlic and ginger were fried till fragrant. As to enhance the flavour, spices such as cinnamon, star anise, clove and cardamoms were put into play. The wok ended up with an appealing bursting aroma. Then beef stock and together with sweet dark sauce were added in to balance up the taste. We slowly reduced the stock to half and folded in the toasted grated coconut and the sliced sirloin steak. Within twenty minutes the dish was ready to serve. It was robustly flavorful and filled with sweet aroma.

     GARLIC CHILLI PRAWNS MAIN COURSE
              

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1 large red chilli, sliced thinly
  • 8 gloves garlic, peeled and thinly sliced
  • 500g raw prawns, shelled, leaving the tails intact
  • salt to taste

Method:

  1. Heat the olive oil in a large pan over medium heat, then add the chilli and cook until it starts to colour.
  2. Add the garlic and cook for a further few moments, but do not let it go brown.
  3. Toss in the prawns and sear until pink.
  4. Season with the salt and serve immediately.


 



           Passionberry Dessert

Ingredients

Raspberry Mousse:

  • 1 pound egg whites
  • 1/4 teaspoon salt
  • 8 ounces sugar
  • 1/4 cup plus 2 tablespoons water
  • 1-ounce gelatin powder
  • 2 tablespoons warm water
  • 8 ounces raspberry puree
  • 1 quart heavy cream, whipped

Cake:

  • 1 store bought or homemade vanilla sponge cake
